NO MEAT!
We have taken the plunge and have decided for a healthier tomorrow to start a vegetarian diet.
Technically, we have chosen an Ovo-Lacto Vegetarian diet which means we will still eat eggs and dairy products.
You would be surprised how many recipes and options there are for this lifestyle.
I know I was.
And also to my surprise my grocery bill was no more than it usually is and looking at my cart I feel like I bought so much more. Who said it was more expensive to eat healthy?
Here is what I had for breakfast this morning.
Toasted Cheese and Jam Sandwich.

So so good. Really it is, try it.
Here is what I made for dinner tonight!
Kidney Beans, Black Beans, Morningstar *Meat* Crumbles, Taco Seasoning, Cheese and Fritos.
Then we rolled it into tortillas with a dab of sour cream. Yummy!
We paired it with a Mexican Salad.
Add a little chipotle dressing and it is DELISH.

ReplyDeleteI am in admiration! Your breakfast looks very satisfying. And, the dinner, definitely looks (and sounds) delicious! Please (if you can) elaborate on what influenced you to go vegetarian.
ReplyDeleteLooks yum yum yummy. :) We eat that cheese/jam combo almost every day now. Silly us!! The kids are addicted. I hope the vege-meat is digestible...sometimes all that soy can be a culprit for people too.
