This was one of the meals that I made this year with left over Thanksgiving turkey.
Turkey Tettrazini
Ingredients
- 12 oz egg noodles, spaghetti, linguine or other pasta
- 1/2 cup butter
- 1 1/2 cups of milk
- 1/4 cup sour cream
- 2 cups chicken broth
- 3 cups coarsely chopped cooked turkey
- 1 cup peas
- 2/3 cup freshly grated Parmesan Cheese
- 2 Tbsp lemon juice
- Salt and Pepper
Directions
1. Cook pasta in large pot (al dente) and drain.
2. Combine butter, milk, sour cream, broth , lemon juice, salt & pepper in small sauce pan, simmer.
3. Cook peas as directed.
4. Warm up turkey in separate frying pan with a dab of butter or EVOO. Stir constantly. (Low-Med Heat)
5. Combine all items into large pot.
6. Serve into dish.
7. Sprinkle Parmesan Cheese on top.

ReplyDeleteI'm lucky (or my children are)that we do have the benefit of having a husband/father who is a world class cook, so I only have to cook on the days when he's working afternoon shift.
