You Had Me At...Feta!

I have been perusing the internet recipe sites to find a new dip for chips and oh, man did I hit the mother lode.   It was too good not to share.

 

If you have been reading my blog long enough you know "one" of my weakness' is cheese (remember My Ode To Cheese post).


I am so making this for Superbowl Sunday.


Avocado Feta Salsa Dip

Ingredients

  • 2 plum tomatoes, chopped (I think I might use Roma Tomatoes instead since I have some on hand already AND if I need more I know they are on sale right now)
  • 1 ripe avocado - peeled, pitted and chopped
  • 1/4 cup finely chopped red onion
  • 1 clove garlic, minced
  • 1 tablespoon snipped fresh parsley
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon olive oil
  • 1 tablespoon red or white wine vinegar
  • 4 ounces crumbled feta cheese (Chances are I will probably use more than 4oz of this. I just bought a container of this that I was going to use it in a Greek Pasta Salad BUT I think I will use it for this instead)

Directions

  1. In a bowl, gently stir together tomatoes, avocados, onion, and garlic. Mix in parsley and oregano. Gently stir in olive oil and vinegar. Then stir in feta. Cover, and chill for 2 to 6 hours.

And since I love cheese so much, I think it is appropriate that I put my money on the Green Bay Packers...GOOOOOOO PACKERS!

Now, I think I need to find myself one of those Cheese Head Hats like this guy....maybe some of the war paint, too?

Funny thing, my husbands family is from Green Bay area so by default, even if I didn't like cheese, I would *have* to cheer them on.  (And shhh, I think Tillamook Cheese from Oregon, is better than Wisconsin's but don't tell anyone).

  5. Oh this sounds SO YUMMY. It has all the ingredients that I so love. Now, I'm going to have to make this for the super bowl too!


    If I could be a super hero for just one day, I would be Iron Man. Why? Because My four-year-old grandson thinks Iron Man is the bomb, LOL. This would give me a great day of quality time to spend with him. And that my friend would be the best family memory EVER for me.
